Since hearing about Meal Planning Monday back in July, I’ve managed it all of once so far! It’s a great idea and really helps save on time and money, but somehow I never get round to the planning on a Sunday and Mondays at work are so busy that’s not an option. today thought on a lazy Sunday afternoon whilst hubby is watching his beloved Liverpool on Sky Sports, I’ve decided to get some recipe books out and get some inspiration for the week ahead.
Monday – Vegetable Pasta Bake. Using the leftover veg and excess white cheese sauce from the sunday roast (we always make too much)
Tuesday – At the Lichfield Food Festival on Saturday we bought 2 delicious looking caramelised onion and goats cheese tarts from the stall run by Packington Moor Farm & Shop so we will have these with some salad.
Wednesday – There’s some frozen raw King Prawns in the freezer so I’m going to make these into a Goan Prawn Curry with the help of a Spicentice Spice pack
Thursday – Prawn Linguine (with the rest of the prawns that weren’t used last night for the curry)
Friday – Pork escalope with wild mushrooms and mash ( A slight adaptation of a Jmes Martin recipe from his book ‘My Kitchen’
Saturday – We’re out for dinner on Sat night at Adams Restaurant in Birmingham for our 1st Wedding Anniversary. Watch this space for the review….
Sunday – After the meal the night before and a (hopefully) great breakfast the next day at Yorks Bakery Cafe we won’t need much food on Sunday so will graze on bits from the fridge and have some of the Mulligatawny Soup that I froze a few weeks ago
